The big dudes with bricks are just parry tests. Most of their attacks have huge windows to fire off a shot and get a visceral. Basically a split second before you're going to get hit fire a shot then get close and attack.
That said if it's not for you it's not for you. It definitely doesnt get easier as you go, although you get acclimated and used to the combat.
Sekiro is a completely different beast. I'm finally getting the hang of it but the beginning is as brutal as any game I've played. Like, dozens of respawns on mini-bosses. So if the difficulty of Bloodborne is a dealbreaker I would suggest saving the cash and not getting Sekiro. Great experience though.
