Sautee Onions, mushrooms and kale in a frying pan (separate stems and out them in with mushrooms, add leaves later) with enough water to avoid anything sticking . When you add the leaves, add some balsamic vinegar. Serve it over some cheap grain with high protein and fiber (I use Kamut/khorsian wheat cause it's cheaper than quinoa and farro)
Carmelized onions served over steamed kale and baked sweet potato, seasoned with hot sauce
Tbh, most vegetables you would bake require oil and salt to taste like anything so you may wanna steer clear
You like hummus? I got a decent hummus recipe you can add just about anything to and change flavor. Works well with carrots/bell peppers/cucumbers and makes a decent spread as well. Only uses bit of sunflower oil and salt to taste, only downside is it won't keep long
