@Knucklehead, even in a crockpot, you're ruining the meat by putting the sauce on early. You should apply a dry rub that will allow the "skin" (which isn't skin) to get some flavor. But otherwise let that shit cook down in its own fats and a little water. Then rip it apart. And don't even store it with sauce on. Sauce it only when hot and about to be eaten.
